Founded by sculptor and confectioner Kristiane Kegelmann, Pars Pralinen is an independent atelier—separate from the acclaimed Pars restaurant and wine bar, though both share Kristiane’s creative DNA. Here, the focus is on hand-crafted pralines: edible sculptures that challenge the conventions of confectionery. Each praline is a one-of-a-kind: hand-painted, plant-dyed, and sometimes finished with edible gold using the Japanese Kintsugi technique. Kristiane’s background in fine art is present in every detail—from the celebration of natural “fractures” to the bold, unexpected flavor combinations. The atelier’s team, including sous chef Florian Sperlhofer and sommelière Julia Giese, brings together culinary expertise and artistic experimentation, with ingredients foraged or sourced from pioneering small producers around Berlin. Sustainability runs through every process: fair-trade chocolate from Berlin’s Holger in’t Veld, glass milk bottles returned for reuse, and strictly paper packaging. Each praline is more than a treat—it’s a sensory experience, an invitation to slow down and savor the present, and a celebration of imperfection as beauty.
